- Preheat oven to 175 degrees celsius
- Peel the sweet potato and cut it into cubes.
- Put the sweet potatoes on a ovenproof form, season with salt & pepper and drizzle over a little olive oil.
- Season the salmon with salt, paprika powder and chili flakes.
- Cook everything in the oven for approx. 25 minutes.
- Make sure that the sweet potatoes are soft before you mash them.
- Top with crumbled feta cheese and chopped parsley.
- Serve with a salad and homemade tzatziki.
