Souvlaki skewers with tzatziki & Greek salad
Portions: 4
Ingredients
Skewers:
600 g pork fillet
1/2 lemon
2 teaspoons oregano
1 teaspoon thyme
1 pressed garlic clove
3 tablespoons olive oil
Tzatziki:
250 g Turkish yogurt
1 garlic clove
1/2 cucumber
Salt
Salad seasoning
Salad:
1/2 crisp lettuce
1/2 cucumber
2 tomatoes
1 red onion
Green and black olives
1 package feta cheese (light)
2 tablespoons olive oil
Instructions
Soak wooden skewers in water for 30 to 45 minutes or so.
Grate the cucumber and squeeze out the water; mix with the yogurt.
Add pressed garlic, salt and seasoning. Store in the fridge until it’s ready to serve.
Cut up the meat in small bites and put it in a bowl.
Press over lemon juice, add the oil and herbs.
Mix it all together and thread marinated pork pieces through the prepared skewers.
Cook them well done on the grill.
Chop and mix the vegetables for the sallad and add some olive oil.
Serve the Souvlakis with the sallad and tzatziki!
