Vegan stroganoff

Ingredients
60 g Basmati rice
0.25 st Onion
0.5 st Garlic clove
120 g Tofu
1 tbs Tomato paste
100 g Canned crushed tomatoes
50 g Oat based cooking cream
1 tbs Water
0.25 st Vegetable stock
Salt
Black pepper coarse
Instructions
1. Cook the rice according to the package instructions.
2. Peel and chop the onion, then sauté it in a little oil until soft. Add the minced garlic and cook briefly.
3. Press out excess water from the tofu using paper towels. Cut the tofu into cubes and fry with the onion until golden.
4. Stir in the tomato paste, crushed tomatoes, cooking cream, and a splash of water.
5. Season with salt, pepper, and optionally some vegetable stock. Let the stroganoff simmer on low heat for about 5 minutes.
6. Serve with the rice.
