Chicken Risoni with Garlic and Herbs
Portions: 4
Ingredients
150 g Baby plum tomatoes
1 st Garlic
600 g Chicken fillet
1 handful Baby spinach
3.5 dl Risoni
1 dl Light Philadelphia garlic & herbs
1 tsk Olive oil
1 st Chicken stock
1 st Onion
100 g Apetina White cheese 10%
Instructions
1. Finely chop the onion and garlic.
2. Cut the tomatoes into small pieces.
3. Heat some oil in a pot and sauté the onion, then add the chicken.
4. Stir in the tomatoes and risoni.
5. Crumble in the chicken stock cube and stir in the Philadelphia garlic & herb cream cheese.
6. Pour in 600 ml of water.
7. Cover the pot and let it simmer for 8â10 minutes.
8. Add a handful of baby spinach and gently stir until wilted.
9. Season with salt and pepper to taste.
10. Serve topped with fresh parsley or crumbled feta.
