1. Cook the rice according to the package instructions.
2. Prepare the vegetables: chop the chili and garlic, cut the lime into wedges, grate the carrots, slice the cucumber, peel and grate the ginger. Trim the broccoli stem and cut into small florets. Peel and dice the mango.
3. Steam the broccoli in the microwave or over a pot of boiling water.
4. Make the marinade by mixing chili, garlic, soy sauce, and 2 tbsp lime juice in a small bowl.
5. Heat the rapeseed oil in a frying pan. Cook the ground beef with a little salt until fully done. Add the marinade and let simmer for 3–4 minutes.
6. Divide the rice into bowls and top with ground beef, vegetables, and mango. Finish with cilantro and sesame seeds, if desired.
