Raw razorz with shrimps

Ingredients
400 g Potatoes
25 g Butter 60% fat
100 g Shrimps peeled
0.5 st Red onion
4 msk Crème fraîche light
0.25 st Lemon
20 g Lumpfish roe
Instructions
1. Grate the potatoes coarsely and squeeze out the liquid.
2. Divide the grated potatoes into two portions and press each into a potato cake.
3. Fry the potato cakes in butter over medium heat until golden and crispy.
4. Top with shrimp, thinly sliced red onion, crème fraîche and roe.
5. Top each potato cake with a slice of lemon and serve immediately.
